The cup of excellence is a strict competition that selects the very best coffee produced in that country for that particular year. These winning coffees are chosen by a select group of national and international cuppers and are cupped at least five different times during the competition process. The final winners are awarded the prestigious Cup of Excellence and sold to the highest bidder during and internet auction.
The Cup of Excellence competition cycle was conceived with the purpose of finding masterpiece lots of coffee from hundreds of entries. This requires a dedication to key details and an unrelenting repetition in the cupping search process that has become the unique signature of the Cup of Excellence.
Cupping are done in sessions of ten coffees or less on a table. All competition coffees must score at least 84 points to move to next round.
The Cup of Excellence cupping form rates the cup quality of submitted coffees using multiple categories:
a. Absence of defects
b. Cleannes of cup
c. Quality of acidity and mouthfeel flavor
d. Aftertaste and balance
These coffees are very rare, they are perfectly ripe, carefully picked with well developed body, pleasant aroma and a lively sweetness that only extremely high quality speciality coffees contain.
